Grilled Vegetable Salad w/ Arugula and Vinaigrette

Salad Ingredients

1 pound arugula

2 tablespoons olive oil

1 cup beets, sliced

1 Vidalia onion, peeled and thinly sliced

½ pound sweet potatoes, cleaned and cubed

½ cup freshly grated sharp cheddar or smoked Gouda

½ teaspoon salt

¼ teaspoon black pepper

Vinaigrette Ingredients

¼ cup olive oil

Juice of one lemon

2 tablespoons red wine vinegar

2 cloves of garlic, minced

¼ teaspoon salt

¼ teaspoon black pepper
