Shrimp Fra Diavolo

The cold weather is officially here, but no worries since Kate from Kate’s Plate is here with a hearty and healthy meal that’ll warm you and the family right up.

Shrimp Fra Diavolo

Serves 2

3/4 lb raw shrimp

Olive oil for sauteeing
1/4 yellow onion, thin sliced
2 cloves garlic, minced
1/2 cup white wine
1 cup crushed tomatoes
1 Tbls tomato paste
1/8 tsp (pinch) smoked paprika
1/4 tsp dried oregano
1/4-1/2 tsp red pepper flakes

Fresh parsley for topping
Saute onions, then add garlic for 1-2 mins. Add wine, tomato paste, crushed tomatoes, and seasoning. Let reduce about 5 minutes. Add fresh shrimp directly into sauce and let simmer on low-medium for 3-4 minutes, until just opaque. Do not overcook shrimp. Serve immediately, top with fresh parsley.
