Cherry Balsamic Chops

2 Bone-in pork chops

1/2 lb Brussel sprouts, cut in half
1 lb sweet potatoes, cut into 1″ chunks

Sauce:
1/3 cup shallots, 1/4″ chopped
2.5 Tablespoons balsamic vinegar
4 tablespoons tart cherry juice
2 tablespoons Murray’s spiced cherry preserves
1/2 cup pitted dark cherries, sliced
1/4 tsp kosher salt
